Okay so something that is comfort food and delicious and really simple that mom told me about and I kinda just went with it and made it up as I went was a Creamy Chicken and Cheese Pasta Bake. Ingredients: -1 can cream of chicken soup -1, 12.5 oz canned chicken breast, (don't drain) -about a cup or so of shredded cheese (whatever kind you like) -1 lb of penne pasta or any type you like
Directions: 1. Boil water and make pasta as directed. 2. Pour cream of chicken soup, chicken and fluid in can, and cheese into sauce pan. Bring just to a boil and then reduce to a simmer. 3. Once the pasta and sauce are done, pour sauce over pasta and mix together. Put in oven safe bowl and top with extra cheese. Place in 300° oven and bake for 10-15 minutes or until the pasta and cheese are golden on top.
This one is super simple and takes very little prep time (something I'm very fond of)
Enchilada Chicken Wraps
1 can enchilada sauce (I get the green chile kind because it has a little spice to it, but you can use red enchilada sauce if you want it to be mild.) Chicken breasts (however many you want) Tortillas Spanish/Mexican/Taco rice packet Shredded cheese Chopped tomatoes
1. Preheat over to 375. 2. Place thawed chicken in a single layer in a baking dish. Pour enchilada sauce over chicken (you don't have to use the whole can if you are using less chicken.) 3. Cover with foil and bake for 25 minutes. Remove foil and bake for 5 more minutes or until fully cooked. 4. While chicken is baking, cook your rice, cut your tomatoes, and shred the cheese. 5. When chicken is done, cut into strips and make wraps with tortillas. You can use the rice inside your wraps like we do, or serve it as a side dish. Garnish with cheese and tomatoes, and even lettuce.
We like to have the new Bush's Grillin' Beans in the black bean fiesta variety with it. Just as an idea.
